There is some excellent architecture around downtown. Take a stroll and take in the architectural beauty that we (the US) seem to have lost somewhere along the way.
Just outside of Portland you will find the Columbia River Gorge, home to miles of hiking, biking and swimming bliss.
There are anything quite a few waterfalls that you can just pull over, see and keep n driving. By why not get out and stretch the legs and put in a tiny bit of effort to see a few more? While they might not be far hikes, it can be fun to have a day of a few short hikes to let you see and experience more of the land.

This icon bridge is one of the final stretches of the PCT and lets you hop on over to Washington, cause, why not? Heads up, it is a toll bridge.
Just hike up to Rodney Falls, or challenge yourself to go the whole 8 mile loop and take in the summit of Hamilton Mountain.
